            The Parmigiano-Reggiano Cheese
The well-known Italian Parmigiano-Reggiano is a hard-paste and long-maturation cheese made using dairy RAW MILK only (not pasteurized).

It consists of just a 30% water and 70% nutrients, causing its richness in proteins, vitamins and mineral salts.

It's made with skimmed dairy milk, and contains less fat in the dry extract, lower than any other cheese.

And then, the Parmigiano-Reggiano cheese is free from carbohydrates and milk sugar, but's an inportant source of calcium, basic for growth and skeleton health.
